
Kudos to Betty Wier and Rita Meek for helping with Emmanuel Dining Room this month! Thanks to them, our operation ran like a well-oiled machine.
Bright and early on the morning of June 19th, Cindy Cohen delivered the EDR groceries to Betty Wier, who singlehandedly put together all of our casseroles for serving on June 20th. In 4 hours Betty had shredded ~30 lbs of chicken, divided it among 7 casserole pans, added soup and veggies to the mix, made mashed potatoes to put on top, and finished them off with shredded cheddar cheese. At 1:00 p.m., Rita Meek swung by and picked up the 7 finished casseroles, along with our Oreo cookies and cans of apples, and delivered them all to Emmanuel Dining Room for refrigeration until the next morning, when the meal is heated and served by the EDR staff (due to Covid). These ladies make it look easy! And for that, and so much more, we are grateful.
